Good eats

I have embraced the pinterest phenom & have been working on adding more meals into our rotation at home. Cooking is definitely easier when I am home more days during the week & I have been proud of myself for menu planning each week. It makes things so much easier to know what we're having, whether it is a work day or not. It also helps that I can plan easier meals for work days. I have been trying to add 1-2 new pinterest finds to the plan each week. There have been a couple of fails but most have gotten the stamp of approval & are now in the meal rotation. Here are some of our favorites.


Toddler muffins - Levi loves these. I did make quite a few changes because I didn't think the original recipe was that "healthy". So, I substituted in some greek yogurt for butter (this is one of my favorite pins that I use all of the time!), applesauce for eggs, put in 1/2 whole wheat flour etc. Oh, and I also used frozen pureed sweet potatoes because I had some in the freezer that Levi never ate. They're moist & delicious & easy to pull out of the freezer when I need something quick for Levi.

Chocolate Chip Banana muffins - On the rare occassion we have bananas left over that get ripe, these are awesome. I also make some substitutions to this recipe. Sooooo good & freeze well.

Peanut Butter, Strawberry Granola wrap - I had these all of the time last summer. Looking forward to strawberries not costing an arm and a leg so I can have them again!

Crock pot ranch chicken tacos - the chicken is so tender & it is super easy. A little too much flavor for Levi but everybody else likes it!

Cheddar Baked Chicken - this is probably my favorite thing I have tried so far. Yum. And great leftovers.

Cheddar Bacon Ranch Chicken Pasta- also delicious

Cheese Potato Sausage Casserole - Good! But not good for you :) This is a good one to use up leftover ham as well.

Crockpot Chili - we love this chili recipe. I make it with turkey or with beef/pork. It's so good & it makes a ton!

Chicken sweet potato stir fry with Quinoa - this was my first time cooking quinoa & it went over well. I would say this was something that surprised us all. Now I'm looking for other quinoa meals to use up the rest of the bag. We made pizza bites this week and they were pretty good too.

Another one that I can't find now is a baked potato with ham & broccoli & ranch...not sure where I found that one. Erik & I both love these too.

And yes, we do eat more than chicken!

  1. Oh I need to try some of these - I'm getting tired of eating the same meals, week after week. Good job on the weekly menu planning - I don't know why more people don't do it. It makes it much easier to shop and less stressful come dinner time each night! :)
